Watermelon Mint and Feta Salad

Yield: 12 servings

  • 1 ea. Watermelon (rind removed, cut into 1 inch pieces)
  • 1 cup Mint (rinsed and chopped finely) (reserve a few whole sprigs for garnish)
  • 1 cup Feta Cheese (crumbled)

Mix all ingredients together and refrigerate overnight. Garnish with fresh mint and feta cheese.
